Smoked Chicken and Feta Quiche

1 onion

3 Cloves of Garlic

a little oil

9 eggs

3 Cups Milk

1 1/2 Cups Flour

1 1/2 tsp Baking Powder

1 Smoked Chicken stripped off the carcass

200gm Pack of Feta Cheese

A couple of grated carrots

1-2 cups of Frozen Beans

1-2 cups of Frozen Corn

1 Cup Grated tasty Cheese

1 Extra Cup Grated cheese for sprinkling on top.

Cook the Garlic and Onion in a little oil until soft.  Mix the Eggs, Milk, Flour and Baking Powder together to make a batter.  Add all other ingredients into the batter, keeping one of the cups of Grated Cheese to sprinkle on top.  Pour the mixture into two-three greased, large oven proof dishes.  Cook at 180 degrees C for about an hour until the mixture is set.  

All vegetables and meat can be adjusted to taste. This easily feeds 8 Adults and has leftovers for lunch.
